At a sap-to-syrup ratio of roughly 100:1, birch syrup is truly a labor of love. The origins of birch sap collection date back millenia when tapping the "poor-man's cow" was more than just a niche urban novelty.
Hundred One Sugarworks is a celebration of the return of warmth to the interior of Alaska and a nod to the diverse and rich history of birch sap. Our farm, on the hillside of Sunrise Mountain in Fairbanks, is located on what was once the largest birch sap operation in Alaska. We process our syrup the old-fashioned way as homage to a childhood spent boiling down maple sap in sugar shacks of Maine.
